Food Science & Technology

General
Food Science and Technology is a General subject undertaken over Year 11 and 12 that has strong practical and theoretical components. 

Previous experience in foods related subjects is not essential although being familiar with some of the concepts and equipment can be an advantage. 

Students select this subject out of a love of preparing and eating food, but also the curiosity to know more about the science of cooking and nutrition. It is highly recommended to those who are interested in a career in hospitality, nutrition, health related areas or any other career working with food. 

Students cover a range of concepts including: 

  • Hygiene and safe food handling 
  • The science of how food cooks 
  • What makes food brown, thicken, coagulate? 
  • Nutrition – what does healthy mean? What happens if what we eat is unhealthy? 
  • What are the different methods of cooking? 
  • How can recipes be adapted to be healthier? 

Students also have freedom in the design process. Projects are constantly changing but may include: 

  • Catering for the Year 12 Graduation  
  • Designing and producing a YouTube style cooking show video 
  • Precision cutting skills 
  • Bake-off Competition with external judges 
  • Hospitality experience helping to run the ECCspresso Café making coffees, hot chocolates and milkshakes
